Pudding Puffs
These gems have been passed down to me by another wonderful mum "Marlene" and has now become our signature dessert any time we are invited out to dinner. Light fluffy dessert cases that will be mentioned for years to come.
Ingredients: 3 sheets puff pastry 1 packet White Wings Instant pudding (you can substitute another brand but I have always used this one) 2 tablespoons sugar 1 cup milk 1 350ml cream (can be lite also)
Method: 1. Combine instant pudding, sugar and milk together and mix until you have virtually no lumps and all the instant pudding powder is mixed in. 2. Add cream and fold through the instant pudding, combine well until there are no lumps. Place mixture in fridge. Important note: ensure the puff pastry is still frozen when you start working with it as it will not rise when you cook it. 3. Grease baking tray or line it with baking paper. 4. Start by getting a sheet of puff pastry, cut into 9 squares evenly (approximate is fine also, I don`t expect everyone to get out a ruler to measure ;-)).
5. Place squares on baking tray and pop into the oven. As all ovens cook differently I would say keep checking the puffs until they are golden brown and have "puffed" up. Repeat with the remaining sheets. 6. Once you have cooked all the puffs, cut the cases in half and fill with your mixture. Voila, you have pudding puffs.
** These are best made on the day of serving.
